today I want to give you two recipes that use black currants (ribes nigrum). Known for its anti-inflammatory and antihistamine properties, it is useful against conjunctivitis, allergies and tiredness. Blackcurrant can be used as an infusion obtained from the leaves for a diuretic and purifying action and as an adjuvant in the treatment of circulation disorders and against painful inflammations of joints and muscles. The products obtained from the fruits, on the other hand, are more suitable for preventing the flu or relieving its symptoms.
Black Currant Liqueur (Cassis)
Necessary
Blackcurrant fruit 1 kg
Cinnamon 2 g
Cloves 12 g
Brandy 3 lt
Cane sugar 750 g.
Method
Leave to macerate for a month, taking care to shake every day. Filter the liquid through a fine cloth. Crush the fruits and pass them through the cloth squeezing. Leave to rest for 24 hours and then repeat the filtration. Distribute in bottles.
Blackcurrant cream
Place the berries in a wide-mouth jar in layers alternating with layers of sugar. Close hermetically and leave to macerate for two or three months. Filter. It takes about five jars of this compound to make a bottle of creamy liqueur with a magical scent.
